Quench your thirst with these deliciously refreshing drink recipes. They are easy to make and are guaranteed to be a hit with everyone this festive season.

 

Watermelon And Raspberry Crush

Serves: 1

Prep Time: 10 mins

Vegetarian: Yes


Ingredients

  • ½ cup watermelon
  • ½ cup frozen raspberries
  • ½ cup fresh strawberries
  • A few fresh mint leaves to taste
  • A large handful of ice cubes

Method

1. Place all ingredients in blender, reserving some mint for garnish.

2. Whizz for 1-2 minutes until combined, but still slightly icy.

3. Pour into a medium-sized glass, garnish with additional mint and serve immediately

Berry, Melon And Mint Delight

Serves: 2


Ingredients:

  • 1 cup ice
  • 1 cup berries – choose berries to your liking; strawberries, raspberries, blueberries
  • 1 cup watermelon
  • ½ cup shredded mint

Method:

Place ice, berries and watermelon in a blender and combine until smooth. Stir through mint and serve.

Lychee + Watermelon Granita

Serves 1.

INGREDIENTS
1½ cups watermelon, cut into chunks
3 lychees (tinned is ok)
Juice and zest from ½ lime

 

METHOD

  1. Place the watermelon, lychees and lime juice in a blender or food processor. Blend until smooth.
  2. Pour the fruit into a metal pan and freeze for 30 minutes.
  3. After 30 minutes gently scrape the mixture with a fork to move the liquid around.
  4. Return the pan back into the freezer and repeat this process every 30 minutes to form largish ice crystals (this should take approximately 3-4 hours in total).
  5. The granita will be ready when the mixture is completely frozen but has large flaky ice crystals.
  6. Serve in your favourite glass and garnish with a wedge of fresh lime & zest.
