INGREDIENTS:
1 Jenny Craig Tuna Baked Potato
½ cup iceberg lettuce, shredded
½ carrot, shredded
1 celery stick, chopped
½ cup green beans, trimmed and chopped
½ tomato, diced
1 spring onion, finely chopped
1 tsp capers
Fresh dill to taste
Lemon juice and pepper to taste
METHOD:
- Prepare Jenny Craig Tuna Baked Potato according to instructions on the package.
- Assemble the salad while the potato warms by placing lettuce, carrot, celery, green beans, tomato, spring onion, capers and dill into a bowl.
- Top with the warmed Jenny Craig Tuna Baked Potato and season with lemon juice and pepper to taste.
