Orange, Beetroot & Feta Salad

Ingredients:

Salad

  • 2 cups mixed salad leaves
  • 1 orange, peeled and sliced into thin rounds
  • ½ fresh beetroot, thinly sliced
  • 2 radishes, thinly sliced
  • 40g feta cheese, crumbled 1
  • tsp chives, finely chopped

Dressing

  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 4 tbsp water
  • Pepper to taste

 

Method:

  1. Place the mixed salad leaves onto a plate and top with sliced orange, beetroot, radish, feta cheese and chives.
  2. Prepare the dressing by mixing the Dijon mustard with lemon juice, water and pepper.
  3. When ready to serve, pour the dressing over the salad and toss to combine.

 

Enjoy!
