Broccoli Salad

Serves: 2

Ingredients:

Salad:

  • 1 head of broccoli, chopped
  • 1/8 of a red onion, diced
  • 2 tbsp dried cranberries
  • 40g reduced fat, Feta cheese
  • 1 tbsp fresh dill, chopped
  • 1 tbsp flat leaf parsley, chopped

Dressing:

  • 50g natural fat free yoghurt
  • 1 tsp onion powder
  • 1 tbsp fat free mayonnaise
  • 1 tsp sugar free maple syrup
  • 1 tbsp apple cider vinegar
  • ½ tsp Dijon mustard
  • ½ garlic clove, crushed
  • Salt & Pepper to taste

Method:

  1. Lightly steam broccoli for 1-2 minutes until just tender.
  2. Add steamed broccoli, onion, cranberries, feta, dill and parsley to a bowl and set aside.
  3. Make the dressing by whisking all ingredients together, then pour dressing over the salad and toss to combine. Season with salt and pepper to taste.
