Broccoli Salad

Broccoli is often referred to as a nutritional powerhouse, and for good reason – around half a cup of cooked broccoli will provide almost all of the vitamin C you need for the day, as well as some folate, beta-carotene (which our body converts to Vitamin A), and small amounts of B vitamins, iron and calcium.

Many people are drawn to broccoli because it contains powerful cancer-fighting compounds called indoles and isothiocyanites which can reduce your risk of several cancers, including cancer of the colon.

Best lightly steamed or microwaved, it’s ready to eat within a few minutes of cooking, just as soon as it turns bright green.  When combined with the saltiness of feta cheese and the sweetness of dried cranberries, this delicious broccoli salad will bring some joy to your taste buds and undoubtable benefits to your health.

 

Broccoli Salad

Serves: 2

 

Ingredients:

Broccoli Salad

  • 1 head of broccoli, florets and stems cut into bite-sized pieces
  • 1/8 of a red onion, diced
  • 2 tbsp dried cranberries
  • 40g reduced fat, Feta cheese
  • 1 tbsp fresh dill, chopped
  • 1 tbsp flat leaf parsley, chopped

 

Broccoli Salad Dressing

  • 2 tbsp natural fat free yoghurt
  • 1 tsp onion powder
  • 1 tbsp fat free mayonnaise
  • 1 tsp honey
  • 1 tbsp apple cider vinegar
  • ½ tsp Dijon mustard
  • ½ garlic clove, crushed
  • freshly cracked pepper, to taste

 

Broccoli Salad Method:

  1. Lightly steam broccoli for 1-2 minutes, refresh under running cold water and drain.
  2. Combine broccoli, onion, cranberries, feta, dill and parsley in a bowl and set aside.
  3. Make the dressing by whisking all ingredients together in a small bowl,  pour over the salad and toss to combine.
  4. Season with freshly cracked black pepper to taste.
