Asian-style Slaw

Serves: 4

Ingredients:

Slaw:

  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 Lebanese cucumber, sliced
  • ½ red capsicum, thinly sliced
  • ½ cup fresh coriander, roughly chopped
  • 2 spring onions, chopped

Dressing:

  • 2 tbsp sweet chili sauce
  • 2 tbsp low sodium soy sauce
  • 1 garlic glove, crushed
  • Juice from 1 lime/lemon
  • 1 chili finely diced (optional)

Method:

1. Combine all ingredients for the dressing and set aside.
2. Place salad ingredients into a large bowl, pour over dressing, then toss to combine.
